Cast iron daisy wheel

The fine control for your temperature.

On top sits the cast iron daisy wheel: the top vent. Turning it further open or closed controls how much warm air can escape, and so how hard the fire draws underneath.

Cast iron doesn't warp in the heat, so the wheel keeps turning smoothly for years.

Felt gasket

A felt gasket sits between the lid and the base. It seals the kamado airtight, and that's exactly why you control the temperature with the vents instead of the fire doing its own thing.

Bottom vent slider

The coarse control: how much air gets in.

At the bottom is the slider that lets fresh air reach the coals. Wide open means high heat for searing; a couple of centimetres open keeps you at smoking temperature.

You also remove the ash through the same opening once the kamado is cold.

Ceramic sphere

Weatherproof, year after year.

The glazed ceramic sphere withstands rain, wind and frost. You don't need to bring the kamado inside in winter, just close the lid and the vents so no water collects in the firebox.

The glaze makes the outside easy to keep clean: a damp cloth is enough.

Heat deflector

The switch between grilling and slow cooking.

Place the ceramic heat deflector under the grate and the direct flame is shielded. From that moment the kamado becomes an oven: even cooking, smoking and baking without a scorched underside.

This part turns a barbecue into a smoker, and it's included as standard with the Classic.

Fire bowl and charcoal grate

Where the fire sits, and where the air needs to go.

The coals sit in the fire bowl on the charcoal grate. Space stays free underneath so air from the bottom vent slider can flow around the coals and the fire burns clean.

Ash falls through the grate to the bottom, out of the way of your burning coals.

Ash space

Cleaned up in a minute.

Ash collects under the charcoal grate. Once the kamado is cold, remove it through the bottom vent with an ash spoon.

With normal use you don't need to do this every session: a kamado uses so little charcoal that the ash builds up slowly.

Airflow

Two sliders, one temperature.

You control a kamado with air, not knobs. In at the bottom, out at the top: the more you open, the harder the fire draws. The bottom slider is coarse, the daisy wheel fine.

Build up to your target temperature slowly. If you overshoot, it takes a long time for the ceramic to cool back down.

What the Classic 16"
is built from.

The core of the kamado: a thick ceramic sphere that stores heat and reflects it back to the centre. That means you cook with surrounding heat instead of a flame under your meat, the temperature stays stable for hours and you use little charcoal. The glazed ceramic can stay outside all year round.

The top vent, in cast iron. It doses how much warm air the kamado lets out, giving you fine control of the temperature. Cast iron doesn't warp in the heat, so the wheel keeps turning smoothly, even after years of firing.

The stainless steel grate is your cooking surface for direct grilling. Enough room for a family meal in one go. Want grill marks and more mass, swap it for a 16 inch cast iron grate from the accessories, it fits the same rim.

Frequently asked questions about the Medium Kamado BBQ

Which size kamado should I choose?
The 16 inch is the mid-size: small enough for a narrow patio or balcony, large enough for a family meal. If you regularly cook for eight people or more, look at the Large 21 inch. If you mainly cook for two or want to take the kamado with you, the Small 13 inch is more practical.
What's included?
The kamado is delivered with a stainless steel grate, a ceramic heat deflector, the cast iron daisy wheel as top vent, an analogue thermometer in the lid and a fitted felt gasket. All you need is charcoal.
Can I also smoke low & slow on it?
Yes. Put the heat deflector in, keep the vents nearly closed and the kamado holds around 110 °C for hours. You can make ribs or pulled pork on this size too, you just cook smaller quantities at once than on a Large or XL.
What's the difference between the Classic and the Pro III?
Both series use the same ceramic and cook equally well. The Pro III has a multilevel Smart Qooking System with several grates and heat deflectors, a fibreglass gasket you almost never need to replace and an extra large thermometer. The Classic delivers the same cooking performance without those extras, for a lower price.
Can the kamado stay outside in winter?
Yes. The glazed ceramic withstands rain and frost. Close the lid and the vents after use, so no water collects in the firebox. A protective cover keeps the metal looking good for longer.
How do I control the temperature?
With air, not knobs. The bottom slider is your coarse control for the oxygen supply, the cast iron daisy wheel on top is the fine control. Build up to your target temperature slowly: if you overshoot, it takes a long time for the ceramic to cool back down.
How much charcoal does a kamado use?
Much less than an open barbecue. Because the ceramic holds the heat, one load of charcoal burns at low temperature all day. For a regular grilling session you use a fraction of what a kettle barbecue would take.
Do I need to replace the felt gasket?
The felt gasket between lid and base is a wear part. With weekly use you replace it roughly once every two years. A new gasket is available separately from the kamado parts.
