A kamado is up to temperature within ten minutes and holds that setting without you having to stand over it. So it does not stay limited to that one Sunday in June: you light it just as readily on a Tuesday for two chops and some vegetables.

Cast iron daisy wheel

The fine adjustment of your temperature.

On top sits the cast iron daisy wheel: the top vent. By opening or closing it further you set exactly how much warm air is allowed out, and therefore how hard the fire draws below.

Cast iron does not warp in the heat, so the wheel keeps turning smoothly for years. Together with the bottom vent it controls everything from gentle roasting to searing hot grilling.

Analogue thermometer

One glance tells you where you are.

The lid holds an analogue thermometer with a clear dial. No batteries, no menus: you walk past, look, and know whether to adjust.

Because the thermometer measures the dome temperature, it is best read after the kamado has been stable for a quarter of an hour.

Side tables with tool hooks

Working space left and right.

Two side tables give you room to put down a dish, a board or your plate while you cook. Underneath hang hooks for your tongs, spatula and cloth.

With the tables folded out the Classic is 130 cm wide; fold them in if you want to park it somewhere narrow.

Felt gasket

The airtight seal between lid and base.

Between the lid and the base sits a felt gasket. It seals the kamado airtight, and that is exactly why you can steer the temperature with the vents instead of letting the fire go its own way.

Felt is a wear part: if you use the kamado weekly, you replace the gasket roughly every two years. A set is ordered separately under the parts.

Stand with wheels

Rollable, even with 85 kilos of ceramic.

The Classic stands on a steel stand with wheels. That lets you roll 85 kilos of kamado from your patio to the shelter of the fence without help.

The frame is powder-coated and stays outdoors. The wheels lock, so the kamado does not roll away while you are working on it.

Bottom vent slider

The coarse control: how much air gets in.

At the bottom sits the slider that lets fresh air reach the coals. Wide open means high heat for searing; a couple of centimetres open keeps you at smoking temperature.

Through the same opening you remove the ash once the kamado is cold, ready for the next session in a minute.

Heat deflector

The switch between grilling and roasting.

Put the ceramic heat deflector under the grate and the direct flame is shielded. From that moment the kamado is an oven: even roasting, smoking and baking with no scorched underside.

This is the part that turns a kamado from a barbecue into a smoker, and it is included as standard with the Classic.

Fire bowl and charcoal grate

Where the fire sits, and where the air has to pass.

The coals sit in the fire bowl on the charcoal grate. Below it space stays free, so the air from the bottom vent can flow all around the coals and the fire burns through cleanly.

Ash falls down through the grate and so stays out of the way of your burning coals.

Ash space

Cleared out in a minute.

The ash collects under the charcoal grate. Once the kamado is cold, you take it out through the bottom vent with an ash scoop.

In normal use you do not have to do that every session: a kamado uses so little charcoal that the ash builds up slowly.

Airflow

Two vents, one temperature.

You control a kamado with air, not with dials. In at the bottom, out at the top: the more you open, the harder the fire draws. The bottom slider is your coarse control, the daisy wheel on top the fine one.

Always build up gently towards your target temperature. Overshoot it and it takes a long time for the ceramic to cool back down.

What the Classic
is built from.

The core of the kamado: a thick ceramic sphere that stores the heat and radiates it back towards the middle. That means you cook with surrounding heat instead of a flame under your meat, the temperature stays stable for hours and you use little charcoal. The ceramic can stay outdoors, frost included.

A powder-coated steel frame carries the sphere and brings the grate to working height. The wheels make 85 kilos movable without help, handy if you want to put it against the fence in winter or simply out of the wind. The frame is made to stay outdoors.

There is a side table left and right: room for a dish, a chopping board or the plate the meat goes on. Under the tables hang hooks for your tongs, spatula and cloth, so your tools do not end up on the ground or in among the food.

The top vent in cast iron. With it you meter how much warm air may leave the kamado, and that is your fine temperature control. Cast iron does not warp in the heat, so the wheel keeps turning smoothly, even after years of firing.

The stainless steel grate of 47 cm is your cooking surface. The ceramic heat deflector below it shields the direct flame and turns the kamado into an oven: smoking at 110 °C, indirect roasting, or baking with a pizza stone on top. Both are included as standard.

The felt gasket between lid and base provides the airtight seal that makes temperature control possible. The lid holds an analogue thermometer showing the dome temperature, with no batteries needed. The gasket is a wear part that you replace roughly every two years with weekly use.

How many people is the Large Kamado BBQ 21 inch suitable for?
The 47 cm grate has room for a complete dinner for eight people. If you are serving canapés at a party, this size comfortably takes you past twenty guests.
What is included with the Grill Bill Classic?
The kamado is delivered complete: stand with wheels, two side tables with tool hooks, a stainless steel grate of 47 cm, a ceramic heat deflector, the cast iron daisy wheel as top vent, an analogue thermometer in the lid and a fitted felt gasket. All you still need is charcoal.
What is the difference between the Classic and the Pro III?
Both series use the same ceramic and therefore cook equally well. The Pro III has a multilevel Smart Qooking system with four grates and two heat deflectors, a fibreglass gasket you will almost never replace, an extra large thermometer and XL wheels. The Classic delivers the same cooking performance without those extras, at a lower price.
Can the kamado stay outdoors in winter?
Yes. The ceramic stands up to rain and frost. Close the lid and the vents after use, so no water stays in the firebox. A protective cover keeps the metal and the wood looking good for longer.
How much charcoal does a kamado use?
Far less than an open barbecue. Because the ceramic holds the heat, a single load burns all day at a low temperature. For an ordinary grilling session you use a fraction of what a kettle barbecue costs you.
How do I control the temperature?
With air, not with dials. The bottom slider is your coarse control for how much oxygen comes in; the cast iron daisy wheel on top is the fine adjustment. Build up gently towards your target temperature: overshoot it and it takes a long time for the ceramic to cool back down.
Do I have to replace the felt gasket?
The felt gasket between lid and base is a wear part. With weekly use you replace it roughly every two years. A new gasket is ordered separately under the kamado parts.
Can I bake pizza in it?
Yes. Put a pizza stone on the heat deflector and bring it up to baking temperature. The stone takes on the heat, so the base cooks through from below while the dome cooks the top. A pizza is ready in a few minutes.

Een prachtig product, voelt erg goed en solide uit! Afwerking en materialen zijn top! En ziet er ook nog eens heel gaaf uit! Een plaatje in onze tuin! De L is voor ons helemaal prima met een gezin van 4. Maar ook voor een partij van 30 mensen Pulled pork maken is geen probleem!
