The kamado 21 inch Solo is the stripped-down version of the Grill Bill Pro II: exactly the same ceramic dome, just without a stand, without side tables and without feet. You buy it because you want to fit it into something else, for example a built-in outdoor kitchen, your own wooden table, or a stand you already have.
When to choose the kamado 21 inch Solo
If you're building an outdoor kitchen, a full stand is just dead weight: you'd be paying for a frame you'd remove straight away. That's not included in the Solo version. You get the kamado itself, with the same ceramic build, the same air control and the same firing behaviour as the complete model. Also handy if you already have a table or trolley the dome fits into exactly.
What to watch for when building it in
Make the cut-out large enough so air can move around the ceramic and the appliance drops in without pinching. Keep the bottom air vent reachable at all times, since that's how you control the temperature. Also make sure you can get to the ash drawer to clean up after firing, and allow for a heat-resistant surface around the opening. If you're unsure whether your measurements are right, measure your cut-out before ordering.
Firing it up works the same
The ceramic buffers the heat, so the temperature stays stable and a single load of charcoal takes you a long way. Grilling, smoking and baking work just like on the complete model.
