Cast iron daisy wheel

The fine control for your temperature.

On top sits the cast iron daisy wheel: the top vent. Turning it further open or closed controls how much warm air can escape, and so how hard the fire draws underneath.

Cast iron doesn't warp in the heat, so the wheel keeps turning smoothly for years.

Analogue thermometer

The lid houses an analogue thermometer with a clear dial. No batteries, no menus: you walk past, take a look and know whether you need to adjust.

Felt gasket

The airtight seal between lid and base.

A felt gasket sits between the lid and the base. It seals the kamado airtight, and that's exactly why you control the temperature with the vents instead of the fire doing its own thing.

Felt is a wear part: with weekly use you replace the gasket roughly once every two years.

Stand with wheels

The Classic Sr. sits on a powder coated steel stand with wheels. That lets you roll 95 kilograms of kamado across your patio without help.

Bottom vent slider

The coarse control: how much air gets in.

At the bottom is the slider that lets fresh air reach the coals. Wide open means high heat for searing; a couple of centimetres open keeps you at smoking temperature.

You also remove the ash through the same opening once the kamado is cold.

Heat deflector

The switch between grilling and slow cooking.

Place the ceramic heat deflector under the grate and the direct flame is shielded. From that moment the kamado becomes an oven: even cooking, smoking and baking without a scorched underside.

This part turns a barbecue into a smoker, and it's included as standard with the Classic Sr.

Fire bowl and charcoal grate

Where the fire sits, and where the air needs to go.

The coals sit in the fire bowl on the charcoal grate. Space stays free underneath so air from the bottom vent slider can flow around the coals and the fire burns clean.

Ash falls through the grate to the bottom, out of the way of your burning coals.

Ash space

Cleaned up in a minute.

Ash collects under the charcoal grate. Once the kamado is cold, remove it through the bottom vent with an ash spoon.

With normal use you don't need to do this every session: a kamado uses so little charcoal that the ash builds up slowly.

Airflow

Two sliders, one temperature.

You control a kamado with air, not knobs. In at the bottom, out at the top: the more you open, the harder the fire draws. The bottom slider is coarse, the daisy wheel fine.

Build up to your target temperature slowly. With this much mass, cooling down takes a long time if you overshoot.

What the Classic Sr.
is built from.

The core of the kamado: a thick ceramic sphere that stores heat and reflects it back to the centre. The XL holds more mass than any other Classic, so the temperature barely drops when you open the lid. The ceramic can stay outside all year, even in frost.

A powder coated steel frame carries the sphere and brings the grate to working height. The wheels make 95 kilograms movable without help. The frame is built to stay outside all year round.

A side table sits on the left and right: room for a tray, a chopping board or the plate the meat goes on. Hooks under the tables hold your tongs, spatula and cloth. On a kamado this size you cook more at once, so you use that workspace.

The top vent, in cast iron. It doses how much warm air the kamado lets out, giving you fine control of the temperature. Cast iron doesn't warp in the heat, so the wheel keeps turning smoothly, even after years of firing.

The 52 cm stainless steel grate is the largest cooking surface in the Classic series. The ceramic heat deflector underneath shields the direct flame and turns the kamado into an oven: smoking at 110 °C, indirect cooking, or baking with a pizza stone on top. Both are included as standard.

Isn't an XL too big for weekdays?
No. You can cook small on a large kamado: with less charcoal in the fire bowl you get exactly the same low temperatures. It doesn't work the other way round: you'll never fit a whole brisket on a smaller kamado.
What's included?

What's the difference between the Classic Sr. and the Pro III?
Both use the same ceramic and cook equally well. The Pro III has a multilevel Smart Qooking System with four grates and two heat deflectors, a fibreglass gasket you almost never need to replace, an extra large thermometer and XL wheels. The Classic Sr. delivers the same cooking performance without those extras, for a lower price.
Can the kamado stay outside in winter?
Yes. The ceramic withstands rain and frost. After use, close the lid and the vents so no water collects in the firebox. A protective cover keeps the metal and wood looking good for longer.
How do I control the temperature?
With air. The bottom slider is your coarse control for the oxygen supply, the cast iron daisy wheel on top is the fine control. Build up to your target temperature slowly: with this much ceramic, cooling down takes a long time if you overshoot.
How much charcoal does a kamado use?
Much less than an open barbecue. Because the ceramic holds the heat, one load of charcoal burns at low temperature all day. For a regular grilling session you use a fraction of what a kettle barbecue would take.
Do I need to replace the felt gasket?
The felt gasket between lid and base is a wear part. With weekly use you replace it roughly once every two years. A new gasket is available separately from the kamado parts.
