    What do you use Birch and Oak charcoal for?

    As an all-round charcoal for almost any session on the kamado. The birch gives you quick ignition and initial heat, after which the oak holds the temperature. At around 180 degrees, one fill lasts about three hours, enough for searing and cooking through in the same session.

    What Birch and Oak charcoal gives you

    The birch catches quickly and provides a nice initial heat, after which the oak takes over and burns steadily. At around 180 degrees, one fill lasts about three hours. So you can sear over high heat and then cook through gently, without switching charcoal.

    How to fire it up

    Light a small part of the fill with firelighters and let the fire spread. Want a longer, slower session? Mix in some Quebracho Blanco charcoal. That way you tune the burn time to your dish, rather than the other way around.

    Storing

    Store dry and well sealed. Damp coals ignite slowly and produce unnecessary smoke; stored dry, the bag stays perfectly combustible for a long time.
