What does a cast iron chicken sitter do on the kamado?

It holds a whole chicken upright, so hot air can reach the meat all around and the skin turns crispy everywhere. The raised edge catches fat and juices, which you can use for gravy or vegetables. Because it's cast iron, the heat under the chicken stays stable and the underside doesn't turn soggy.

  • Cast iron, 28 cm diameter, approximately 3.5 kg
  • For a whole chicken, cooked indirect at around 160 to 180 degrees
  • Catches fat and also usable as a roasting dish

With this cast iron chicken sitter from Valhal Outdoor you stand a whole chicken upright on the grate. The cone in the middle keeps the bird stable, the hot air in your kamado circulates all around it, and the skin turns crispy all over instead of just on top. Meanwhile the fat drips into the dish, where you can use it for gravy or vegetables.

The dish measures 28 cm and weighs around 3.5 kilos. That weight is exactly why cast iron works here: it heats up gently, stays hot and keeps the underside of your chicken from turning soggy. No more need for a beer can.

  • Material: cast iron

How to use the cast iron chicken sitter

Work indirect: place a heat deflector under your grate and hold around 160 to 180 degrees. Set the chicken on the cone, slide in some potato wedges or onion if you like, and let the chicken cook until the breast reaches around 72 degrees. Want the skin even crispier, remove the deflector for the last few minutes.

Maintenance

Let the dish cool down, clean it with hot water and a brush and dry it straight away. A thin layer of oil keeps the cast iron in good shape. Not in the dishwasher and don't store it wet.

Frequently asked questions

Does this chicken sitter fit my kamado?
The dish is 28 cm wide and fits a kamado of 16 inch and up. On a smaller kamado, also check the height of the chicken itself with the lid closed.
Do I still need a heat deflector?
Yes, for a whole chicken. You cook indirect, otherwise the underside burns before the meat is done.
Can I use it for something else too?
Yes. Without a chicken, the dish works great for potatoes, vegetables or a stew on the grate.
How do I clean the cast iron?
Hot water and a brush, no harsh cleaning product. Dry it straight away and grease it lightly, so the seasoning stays intact.
Do I need to season it first?
Heating it well once with a thin layer of oil before first use is never a bad idea. After that the seasoning builds up on its own.
