How to use the cast iron chicken sitter
Work indirect: place a heat deflector under your grate and hold around 160 to 180 degrees. Set the chicken on the cone, slide in some potato wedges or onion if you like, and let the chicken cook until the breast reaches around 72 degrees. Want the skin even crispier, remove the deflector for the last few minutes.
Maintenance
Let the dish cool down, clean it with hot water and a brush and dry it straight away. A thin layer of oil keeps the cast iron in good shape. Not in the dishwasher and don't store it wet.
