    When do you need a heat deflector 23 inch?

    As soon as your food is on the kamado for longer than a quarter of an hour. The deflector shields it from the coals, so heat circulates around it and you cook evenly instead of burning the outside. For short, hot grilling, like a steak, you leave it out.

    Maintenance

    Let the ceramic cool down in the kamado before taking it out and scrape off any baked-on fat dry. Dark build-up is normal and burns off again during a hot session. Never pour cold water onto hot ceramic, since it will crack.
