How to light it
Fill the firebox to just below the rim, tuck two or three firelighter cubes among the coals and let the whole thing burn through properly with the lid open first. Then close the lid and only start steering on temperature once you have a small, stable glowing core. Close it down too early and your fire goes out, or the temperature keeps climbing later on.
What else you need
For low temperatures and indirect cooking you'll also need a ceramic plate to keep the heat away from your food. Beyond that, a thermometer in your meat is the fastest way to learn what your kamado does at each vent setting.
