With this rotisserie 21 inch kit you hang a whole chicken, gyros, porchetta or a leg of lamb on the spit above the coals of your kamado. The motor turns the spit at a constant speed, so the meat cooks evenly all around and spreads its own juices over the entire surface. There's no need to turn it, you only monitor the core temperature.
Why a rotisserie 21 inch cooks better
On the grate, the same side of the meat always faces the heat. That means the outside gets ahead of the core and you have to keep turning it. On the spit that imbalance disappears: every bit of the surface passes the heat equally often. Fat and juices that run down get smeared back over the meat on the next rotation. That gives you a juicy core with an evenly coloured crust.
How to use the spit
Tie the meat compactly and make sure the weight is distributed as evenly as possible around the axle. A lopsided chicken makes the motor work unnecessarily hard and rotates unevenly. Then work with indirect heat and a steady temperature; place the heat deflector for the 21 inch between the coals and the meat. Add a drip tray underneath if you want to, to catch the rendered fat for a gravy.
Bill's tipOnly put the spit on once your kamado is stable at temperature. A spit that's turning while you're still bringing the fire up gets fluctuating heat, and you'll see that in the crust.
