Cooking beyond the grill grate

Which smoking wood should I use in a kamado?
For long, low-temperature sessions chunks work best: they smoulder slowly and give hours of smoke. Chips burn faster and suit short cooks such as fish or chicken. Place the wood between or on top of the glowing charcoal.
How do I look after cast iron BBQ accessories?
Clean cast iron with hot water and a brush, without soap. Dry it thoroughly straight away and rub in a thin layer of oil. That keeps the seasoning intact and stops it from rusting.
