When do you choose a 25 cm cast iron pan without a long handle?

When you're working on a kamado or in the oven and don't want a handle sticking out over the edge. The pan only takes up its own space and the lid closes normally. Twenty-five centimetres is enough for two portions. You lift it straight up with both hands, even fully loaded.

The skillet 25 cm with handles from Valhal Outdoor is the version without a long handle. Two short grips on either side keep the pan compact, so it can sit in the middle of the grate without anything sticking out over the edge of your kamado. You lift it straight up with both hands, even when it's full.

The pan is cast from solid, untreated cast iron. That stores heat and releases it slowly, so the base temperature doesn't drop the moment cold meat goes in. That gives you a crust instead of stewed meat.

Why a skillet 25 cm with handles

On a kamado, space is precious. Without a handle you only use the spot the pan itself takes up, and the lid always closes. That's nicer in the oven and on a tabletop grill too. The downside: shaking or tilting is less smooth than with a handle.

How to cook in it

Let the pan get hot empty before adding fat, otherwise things stick. Steak, chicken thighs, mushrooms or sliced vegetables with garlic all work well. Want gentle cooking instead of frying? Place the pan in the indirect zone behind a heat deflector.

Maintenance

Rinse while the pan is still lukewarm, skip the scouring pad and the dishwasher, and dry it immediately. Then rub a thin layer of neutral oil over the inside and outside. That way the seasoning gets darker, smoother and better over the years.

Frequently asked questions

What's the difference with the version with a handle?
With a handle you shake and tilt more easily with one hand. With two handles, the pan stays compact, fits under a closed lid, and you lift it straight up.
Does this pan fit a 16 inch kamado?
Yes. At 25 cm across, a 16 inch kamado still has some grate left over, and on 21 or 23.5 inch there's room for a second dish alongside.
How do I season the cast iron?
Wash the pan, dry it well, and heat it a few times with a very thin layer of neutral oil until it just starts to smoke. Repeat a few times for a solid base layer.
Can the pan handle an open fire or direct coals?
Yes, cast iron handles direct flames and glowing coals well. Just avoid rapid temperature shocks, like cold water in a scorching hot pan.
