How to measure with the Thermapen Classic black

Prod into the thickest part of the meat and avoid bone and thick layers of fat, since those skew the reading. Move the tip slowly back and forth and take the lowest value: that's your true core. With thin cuts like a burger or a fish fillet, insert it at an angle from the side, so the tip actually sits in the middle.

Care and lifespan

Wipe the probe with a damp cloth after use and only fold it away once it's clean. Don't submerge the housing in water and don't leave it next to the firebox: electronics and direct radiant heat don't mix. Replace the battery as soon as the display grows faint, and the reading stays reliable.

What's the difference with the Thermapen ONE?
The ONE reads faster and has a display that rotates automatically. The Classic does the same job in a few seconds and is the more affordable choice if you don't need every second.
Can I leave it in the kamado while cooking?
No. It's an instant-read thermometer for quick measurements, not a probe you leave under the lid. For that you use a thermometer with separate cable probes.
How do I clean it?
Wipe the probe with a damp cloth or some kitchen paper and dry it before folding it away. Never submerge the housing, and never put it in the dishwasher.
