What you measure with the Thermapen ONE yellow
Anything where core temperature matters: steaks and burgers, whole chickens, brisket and pulled pork, but also fish, bread and frying oil. Prod into the heart of the thickest part, stay clear of bone and thick fat, and take the lowest value you see. With thin cuts, insert it at an angle from the side so the tip ends up in the middle.
Maintenance
Rinse the probe briefly after use and dry it before folding it away, so no fat stays in the hinge. Don't leave the device on a hot lid or next to open coals. Check it occasionally in ice water with plenty of ice: that should read around zero degrees.
