    How to dose it

    Storage and pairing

    Keep the wood dry and with air circulating. Damp wood smoulders unevenly and gives sour smoke. If you want to tone down the power, combine it with a piece of fruit wood in the same cook.

    Smoking dust is fine powder for cold smoking with a cold smoke generator. Chunks are coarse pieces that go among burning coals for hot smoking.
    Do I need to soak the pieces?
