    Which meat pairs with oak whisky smoking pastilles?

    Mainly red meat that spends a long time on the kamado: brisket, short ribs, rib-eye, lamb and pulled pork. Oak gives a firm, spicy smoke and the whisky touch lays a sweet layer over that. On fish and chicken this flavour is usually too dominant.

    What oak whisky smoking pastilles do to your meat

    With long cooks, smoke builds up over time. Oak can handle that duration without turning bitter, where lighter fruit woods would already be spent. On brisket, short ribs and pulled pork, you get a dark crust and a flavour that carries through to the core. It also works well on lamb and on hearty cheeses.

    How to dose them

    Wait until your coals are really glowing and the white starter smoke has cleared. Place two or three pastilles between the coals for a short session. Doing a long, low and slow cook? Spread a handful through the charcoal so a fresh one catches as the fire burns through.

    Storage

    Keep dry and closed. Moisture turns the smoke grey and harsh; you want the thin, almost blue smoke you can barely see.

    How much do I use per session?
    Two or three pieces for a short session. For a long, indirect session, spread a handful through the charcoal so they catch gradually.
    Do they actually contain whisky?
    The flavour comes from the wood and its treatment, not from added spirits. You taste a sweet, barrel-like note on top of the regular oak smoke.
    Can I combine them with another type of wood?
    You can. A few oak pastilles with some lighter fruit wood adds depth without making the smoke too heavy. Start cautiously and taste the result.
    What's the difference with chips?
    Chips flare up quickly and are spent within a quarter of an hour. Pressed pastilles burn more gradually and are therefore easier to dose over a longer session.
