    How to use them

    Let the charcoal glow well first, until the smoke runs clear. Then place one or two pastilles on the coals and close the lid. For a longer cook, add another piece later if needed. No soaking needed, it only produces steam and a dull aroma.

    Thyme and fruit wood pair well: the fruit brings sweetness, the herb gives direction. For red meat, add a piece of oak instead, which carries the herbal note better.

    Is the aroma strong?
    No, it's deliberately restrained. You taste a herbal touch, not a thick layer of smoke. Want more, add a second pastille later in the session.
    Do they also pair with fish?
    Yes, as long as you keep it light. One pastille with a whole fish or with prawns is enough; more and the fish's own flavour disappears.
    What's the difference with smoking wood chunks?
    Chunks are large blocks of wood that last for hours and are meant for low and slow cooking. These pastilles are smaller and give a shorter, finer peak of aroma.
    How do I store them?
    Dry and sealed. Damp pastilles steam first and then release much less aroma.
