    How to add the chunks

    Spread two to three chunks among the unlit charcoal before you light the fire. They then come into play one by one and you get smoke for the whole session without opening the lid. Don't place them all on top of glowing coals, or they'll catch fire together.

    How many chunks do I need for a long session?
    Two to three chunks are enough for an eight to twelve hour session in a kamado. Extra wood doesn't add flavour, only a heavier smoke.
    What's the difference with beech chips?
    Chips give off smoke within minutes but burn out quickly. Chunks get going more slowly and smoulder for hours, which is handier for low and slow.
    Should I soak the chunks?
    No. Wet wood produces steam first and cools your barbecue down. Placing it dry among the coals gives a cleaner smoke and a more stable temperature.
    Can I combine beech with a stronger wood?
    Yes. One chunk of oak or hickory alongside two chunks of beech adds more depth while the smoke stays mild. Handy with pork shoulder and beef.
