    How to add the chunks

    Spread two to three chunks among the unlit charcoal before you light the fire. That way they come into play one by one and you get smoke for the whole session. Don't place them all on top of the glowing coals, or they'll catch fire together, giving you too much smoke in the first hour and none after that.

    Combining with fruit wood

    Oak forms a great base. Add a chunk of apple or cherry and you get depth with a sweeter edge. That works beautifully with pork and with sausage.

    Frequently asked questions

    How many chunks do I use per session?
    For a kamado, two to three chunks are usually enough for an eight to twelve hour session. More wood doesn't add more flavour, only a more bitter smoke.
    Should I soak the chunks in water?
    No. A wet chunk produces steam first and lowers the temperature in your kamado. Placing it dry among the coals gives a cleaner smoke and a more stable session.
    What's the difference with oak wood chips?
    Chips catch fire quickly and burn out within half an hour, chunks smoulder for hours. Use chips for short cooks and chunks for low and slow.
    Does oak also suit chicken or fish?
    It can, but oak is fairly bold. For poultry and fish, a fruit wood usually gives a nicer result, especially on short cooks.
