Maintenance

Wash with warm water and a brush, don't let it soak, then dry it standing upright. Rubbing it with vegetable oil a few times a year keeps the wood nourished and prevents drying out and cracking.

Does a whole rib rack fit on this?
Yes, the size was chosen for exactly that. A whole rack of spareribs or a carved piece of meat fits along the length of the board, with room left on the sides for bread or vegetables.
Can the board go in the dishwasher?
No. Heat and prolonged moisture cause the wood to warp. Wash it by hand with warm water and a brush, then dry it standing upright.
How do I get fat and odours out of the wood?
Scrub the board with warm water and a little salt or baking soda, rinse and dry it well. Rubbing half a lemon over the surface helps against stubborn smells like garlic or fish.
What is the difference with the medium size?
The medium size is meant for a single piece of meat or a portion for two to four people. This large version is noticeably longer and heavier, and is meant to be shared at a full table.
