    How do you use smoking wood sheets beech on the barbecue?

    You soak a sheet briefly in water, place it on the grate over direct heat and put your dish on top. The wood smoulders and releases a mild beech smoke from below. Ideal for fish, cheese and vegetables that only spend a short time on the barbecue.
