That way every dish gets a smoky flavour, even when you're not running a whole smoking session. The closed box with small openings lets the smoke escape while the wood itself doesn't catch fire.
What you use the Grill Bill Smoke Box for
A quick, hot cook like a steak, some vegetables or fish normally picks up little smoke flavour: there's simply not enough time for it. With the Smoke Box you add that flavour anyway, without switching to a full low and slow session with smoking wood chunks.
Cooking on gas, you normally get no smoke at all, because there are no coals for the wood to smoulder on. You then place the box right above a burner: the chips smoulder from the heat and you still get smoke flavour without charcoal.

How to fill and place the box
Fill the box with smoking wood chips, close it and place it close to the coals or right above a burner. Wait until you see the first smoke coming out of the openings before you put your dish on the grate. Let the box cool down afterwards and tap out the ash for next time.
