Why lemon smoking wood chips
Heavy wood types leave a strong mark on a dish, and that's not always what you want. Lemon wood stays mild and mostly adds a fresh layer over the meat. That makes it a pleasant choice if you're just starting out with smoking, or if someone at the table finds heavy smoke too much.

How to use the chips
Place a handful of chips dry on the glowing coals once you've reached the temperature you want, or fill a Grill Bill Smoke Box with them. On a gas barbecue that box is essentially essential: there are no coals for the wood to smoulder on. Close the lid quickly afterwards so the smoke stays inside the barbecue.

Chips or chunks
