How to use them

Can I lift a cast iron pan off the kamado with these?
Yes, that's what they're made for. Lift with both hands and set the pan down on a heat-resistant surface right away, so you don't hold it any longer than needed.
Are they sold singly or as a pair?
As a pair. So you can work with both hands, which is a lot safer with heavy cast iron than with a single mitt.
What's the difference with a regular oven mitt?
