    How many chips do I use each time?
    A small handful is enough. Hickory is powerful, so more wood tends to give a bitter rather than a fuller flavour.
    Do I need to soak them first?
    No. Soaked chips release steam first and then still have to dry out. Dry on glowing coals gives a cleaner smoke.
    Can I use hickory with chicken or fish?
    You can, but it overpowers quickly. In that case, mix in some apple or cherry, or go for a milder fruit wood entirely.
    What's the difference with hickory chunks?
