    What do olive smoking wood chips do to your dish?

    They give a soft, spicy smoke flavour with a Mediterranean tone. Olive wood is more aromatic than fruit wood, so it suits fish, vegetables, chicken and lamb well. The fine chips smoulder quickly, so you use them for short to medium preparations.

    Grill Fanatics olive smoking wood chips give your dish a soft, lightly spicy smoke flavour with a clear Mediterranean character. Olive wood is dense and aromatic: the smoke is fuller than that of fruit wood, but stays well away from the sharpness you can get from, say, hickory. You get a 500 gram bag of fine chips, meant for short to medium preparations.

    How to use the chips

    Wait until the coals are properly glowing and your barbecue is up to temperature. Then sprinkle a handful of chips dry over the coals, or fill a Grill Bill Smoke Box and place it among the coals or above a burner. Close the lid, and the smoke drifts past your dish to the top air vent.

    How many chips do I use at a time?
    A handful is enough for most preparations. Olive wood is fairly aromatic, so it's better to start a little cautiously and top up later.
    Do I need to soak the chips?
    No. Soaked wood gives off steam first and only smoke later. Dry on the glowing coals gives a clean smoke flavour faster.
    Are these chips suitable for low and slow?
    Only partly. Chips burn out after half an hour. For a session of many hours you're better off with chunks, possibly topped up with chips at the start.
