The HORL 2 Pro is the extended version within the HORL sharpening system, made for anyone with more than a single chef's knife to keep sharp. The basics are the same as the entry model: the knife sits magnetically against an angle block, the sharpener rolls along it and holds exactly the same angle every time. The difference is the extra sharpening disc, which lets you finish the edge more finely.
What the HORL 2 Pro adds
More steps between coarse and done. Where two grits get a knife sharp, an extra disc lets you build up the edge more gradually: first set, then refine, then finish. That gives a smoother edge that stays sharp for longer, because fewer microscopic hooks are left behind to fold over during the first cuts. With fine cutting work, fish and portioning meat off the kamado, you notice that immediately.
How to sharpen a knife
Choose the angle that suits your knife and stick to it. Start coarse until you feel a burr along the full length, then move a step finer and keep the number of strokes equal left and right. Finish with the finest disc and remove the burr. Rolling calmly works better than pushing hard: pressure doesn't add sharpness, only wear.
