    What is cherry smoking dust used for?

    For cold smoking salmon, poultry and semi-hard cheese with a cold smoke generator. The fine cherry wood smoulders slowly, gives a sweet and fruity smoke and leaves a warm colour on your product. Two to four hours is usually enough.

    Cherry wood is one of the friendliest smoking woods there is. Cherry smoking dust from Grill Fanatics gives a sweet, fruity touch when cold smoking and leaves a lovely warm colour on salmon, chicken and cheese. The dust is finely ground, so it smoulders evenly in a cold smoke generator without catching flame. You get a 500 gram bag, plenty for a series of smoking sessions.

    What is cherry smoking dust used for

    This variety shows off best with products that have a delicate flavour. Salmon and trout, chicken breast, duck breast and semi-hard cheeses are natural choices. Butter, salt and nuts also become more interesting with it.

    How to cold smoke

    Fill the generator loosely, light one corner and let the flame burn for about a minute before blowing it out. Make sure there's a little airflow, otherwise the smoulder goes out. Keep the space below thirty degrees so cheese doesn't sweat and fish doesn't cook. Two to four hours is enough for most products.

    Storage

    Store the dust dry and well sealed. If it picks up moisture, it smoulders unevenly and you get a sour smoke instead of a clean one.

    Why does my salmon colour so nicely with cherry wood?
    Cherry wood releases relatively a lot of colour compounds while smouldering, which settle on the moist surface. Pat your fish dry before the session and the colour comes out even more evenly.
    How long do I smoke cheese with this dust?
    Two to four hours is a good guideline for semi-hard cheese. Let the cheese rest in the fridge for a few more days afterwards before you cut it.
    Can I mix cherry wood with another variety?
    Yes. A mix with oak gives the smoke more body while keeping the fruity note. Start with a ratio of around three parts cherry to one part oak.
    What's the difference with chips?
    Chips are coarser and meant to be placed among burning coals for hot smoking. Smoking dust is fine and smoulders for hours at low temperature.
