    What do you use lemon smoking wood pastilles for?

    For dishes that can only handle a little smoke: fish, shrimp, mussels, chicken and vegetables. Lemon wood gives a fresh citrus note that doesn't overpower the flavour of the ingredient. Place two or three pastilles on glowing coals once the starter smoke has cleared and close the lid.

Where loose chips often burn up in one go, the pressed shape releases smoke that lasts longer.     How to use them on the kamado

    Wait until your coals are glowing well and no more white starter smoke is coming off. Then place two or three pastilles spread between the coals and close the lid. For a long session, distribute them through the charcoal so a fresh pastille catches as the fire moves along.

    Storage

    Keep the bag dry and closed. Pastilles that have taken on moisture burn unevenly and give off grey smoke instead of the thin blue smoke you're after.

    Frequently asked questions

    Do I need to soak the pastilles in water first?
    No. They're pressed and burn down slowly on their own. Soaking mainly produces steam and grey smoke, which is exactly what you don't want.
    How many pastilles do I use each time?
    Two or three for a short session. For a long, indirect session, spread a handful through the charcoal so they catch one by one.
    What's the difference with smoking wood chunks?
    Chunks are coarse blocks that smoke long and strong. Pastilles are smaller, dose more finely and give a more subtle result, ideal for short sessions and delicate ingredients.
    Do they also work on a regular charcoal barbecue?
    Yes. Any barbecue with glowing coals and a lid works. Without a lid, most of the smoke blows away and you'll barely notice it.
