    Do I need to soak the chips in water?
    No. Soaked chips give steam first and only smoke afterwards, and the aroma turns duller because of it. Scatter them dry on glowing coals.
    How many chips do I use each time?
    A small handful over the coals is enough. More doesn't add extra flavour, only sharper, sootier smoke.
    What's the difference with chunks?
    Chips are small and burn out within twenty to thirty minutes, chunks burn for hours. Grab chips for short dishes, chunks for low and slow cooking.
