What is the Smart Qooking System?

The Smart Qooking System is a multi-part stainless steel rack designed specifically for our Grill Bill Pro II and Pro III kamado. The base consists of a sturdy frame holder in which you can create several levels. On each level you can place different accessories: grates, heat shields, pizza stones, drip trays or a wok ring.

The big advantage? You can set up different cooking zones, each with its own temperature and heat distribution. So you sear a steak at 260 °C down below, while up top you let it come slowly to the temperature you want.

Cooking with vision: think about the end result

One of the best tips when using the Smart Qooking System is to work out beforehand what your end result should look like. Close your eyes and picture the perfect dish.

Do you want a steak with those lovely grill marks and a crisp crust? Then start with direct heat for a solid Maillard reaction, after which you move the meat to an indirect zone to let it finish gently. That gives you the perfect transition from a crunchy outside to a juicy, pink centre.

Example: beer can chicken

A good example of what is possible is the classic beer can chicken. It looks simple at first sight, but technically it is quite a challenge. The breast needs a lower core temperature than the thighs, while you also want that golden-brown, crispy skin and a hint of smoke.

The solution? Play with the heat zones of your multi-level system. Place one heat deflector (in other words, a plate setter stone) on the breast side, so it only receives indirect heat. The thighs — on the fire side — get more direct warmth.

That way both parts of the chicken cook exactly right: juicy meat, crispy skin, and that subtle smoky flavour that completes the dish.

By regulating your air supply you hold the temperature at around 160°C, and with a few chunks of smoking wood you add extra depth to the flavour.

The power of layers

The Smart Qooking System is not just about technique, it is about flexibility. With different heights, grates and heat shields you can literally think in layers. You create a cooking environment that suits every dish perfectly — whether you are slowly preparing pulled pork or want to grill vegetables without burning them.

Different set-ups and combinations

The system is designed so that you can play with layers, heights and cooking zones. Below are the most commonly used set-ups:

Direct grilling with cast iron grates (one level)

Remove the heat shields and place the two half-moon grates above the fire. Ideal for: steak, burgers, vegetables and skewers. Tip: use a cast iron grate for those perfect grill marks and caramelisation — so, more flavour!

Indirect cooking (with heat shield)

Place one or two heat deflectors under the grate to block the heat of the fire and the infrared radiation. This turns your kamado into an oven. Ideal for: pulled pork, chicken, bread and pizza.

Half direct – half indirect

Use one heat shield on one side of the system. That creates two zones:
– one side for direct fire
– one side for slow cooking.
Ideal for: dishes you want to sear first and then finish gently, such as tomahawk steaks or salmon.

Multi-level cooking (two or three layers)

Combine several grates at different heights.
– Top: keeping vegetables or bread rolls warm
– Middle: chicken or fish
– Bottom: cast iron pan with potatoes or gravy.
Perfect for complete meals from one kamado. For the third layer you use a separate accessory, the grill riser!

Pizza mode

Use the bottom grate with a heat shield, and a pizza stone above it. The air circulates around the stone and gives a crisp base without burning. Tip: preheat the stone for at least 25/30 minutes for a perfect result, and let the kamado come up to temperature slowly to prevent damage to the ceramic.

Stir-frying with the wok ring

The wok ring is the newest addition to the Smart Qooking System. Fit it in place of the top grate, directly above the fire ring. That way the wok ring catches the heat perfectly and directs it at the base of your pan. Perfect for: Asian dishes, fried noodles, wok vegetables or a quick stir-fry.

With the wok ring you cook at extremely high temperature, with direct heat and maximum control – as if you were working outdoors on a professional wok burner.
