    When do you use 30cm bamboo skewers?

    When you're making bigger kebabs or cooking for a lot of people. The 30 cm length gives room for a full portion per skewer and keeps your hand well clear of the heat while turning it. Soak them in water for half an hour first, so the ends don't burn away over the coals.

    How to work with it

    Soak the skewers in water for half an hour beforehand. Then thread the pieces on tightly, packed against each other, so everything cooks evenly and nothing spins loose. On the kamado you grill them directly over the coals on high heat, or a bit more gently with a deflector if you want to glaze with a marinade.

    What to watch for

    Bamboo skewers are meant for single use. After a session over the fire they're discoloured and weakened, so throw them away afterwards. Also don't let the ends stick unnecessarily far over the fiercest part of the coal bed.

    Why do I need to soak them?
    Wet bamboo burns much more slowly. Half an hour in water stops the ends burning away before the meat is done.
    Do 30 cm skewers fit my kamado?
    On a 21 or 23.5 inch kamado they fit comfortably. On a smaller barbecue you lay them at an angle across the grate or choose the 18 cm version.
    Can I reuse them?
    No. After a session over the coals they're discoloured and weakened. They're meant for single use.
    What's the difference with the 18 cm version?
    The 18 cm is the size for starters and small bites. With 30 cm you make full skewers and your hand stays further from the heat while turning.
