When do you choose the version with a flat base?

When you often cook for a large group and also want to use the pot on a grate or on the stove. The flat base sits stable everywhere, which is harder to achieve with feet. With eight litres you make stew, soup or chilli for eight to twelve people in one go.

The dutch oven without feet from Valhal Outdoor is the large 8 litre size with a flat base. That means it sits stable on the grate of your kamado, on a plancha or fire bowl, and simply indoors on the stove. So you don't need to buy a separate pot for the season when the barbecue is lit less often.

Eight litres is a lot: a pot of stewed meat, pea soup or chilli for a large group fits in in one go. The solid cast iron with the heavy lid keeps the temperature constant, even when you lift the lid now and then to stir.

What you use a dutch oven without feet for

Anything that benefits from long, slow cooking comes into its own here: stewed meat, braised beans, game dishes, soup and sourdough bread. On a kamado with a heat deflector you work with indirect heat and keep the temperature stable for hours, so you barely need to check on the fire.

Without feet or with feet

Want to set the pot right in the middle of a pile of glowing coals over a wood fire? Then the version with feet is better, since it lets air pass under the base. For a grate or hob, this flat version is the logical choice.

Maintenance

Wash the pot with hot water and no washing-up liquid, dry it immediately and rub the inside lightly with oil. Do that every time and the layer keeps getting better, so the pot lasts for decades. Also check the other Dutch ovens or the full cast iron range.

Does this pot fit the grate of my kamado?
On a 21 inch or 23.5 inch kamado it fits comfortably. On a 16 inch kamado, first measure the clearance under the closed lid.
Can I also use it over a wood fire?
Yes, but then set it on a grate or a flat bed of coals. Without feet the pot can flatten the coals, reducing the draught.
Does it need seasoning before first use?
Rinse the pot clean, dry it well and rub it with a thin layer of oil. Then heat it briefly and it's ready for use.
What's the difference with the 6.1 litre version?
Only the capacity and the dimensions. For households of up to about six people, 6.1 litres is usually enough; eight litres you choose for larger groups.
