Placing it
Put the stone in before you fire up, so it comes up to temperature together with the kamado. Placing a cold stone on a hot kamado creates a big temperature difference in the ceramic, and that's not something you want. Make sure the straight edge sits neatly along the imaginary centre line, so the boundary between your zones stays clean.
Maintenance
Let the stone cool down gently in the kamado after use before touching or cleaning it. Cooling it quickly with cold water can crack ceramic. Scrape off any baked-on fat dry, discolouration is just part of it.
