The HORL Whetstone 3000 is the fine stone in the HORL system and picks up where the coarse diamond disc leaves off. That coarse disc removes material and restores the edge; this stone takes out the rough grooves left behind by that process. Your knife not only feels sharp afterwards, it also cuts more cleanly: fewer snags in the fibres, a cleaner pass through meat, fish and vegetables.
When to reach for the HORL Whetstone 3000
Two moments. Right after coarse sharpening, as the standard middle step in the sequence coarse, fine, ultra-fine. And in between, when a knife isn't blunt yet but has noticeably started cutting less smoothly. In that second case you skip the coarse disc, and this stone is often already enough to bring the edge back.

How to use it
Work calmly with even pressure, and keep the number of strokes the same on each side. Pushing too hard doesn't produce a sharper knife, only more wear. Roll the sharpener along the full length of the blade, from heel to tip.
Maintenance
Wipe the sharpening dust off the stone after use and let it dry before storing. A stone clogged with metal dust works more slowly and gives an uneven result.
