What do you use a meat knife 20.5 cm for?

For carving large cuts of meat: brisket, picanha, roast joint, roast chicken and ham. The length of the blade lets you cut through the meat in one stroke, so the slices come out even and the fibres stay intact. Cut across the grain and let the meat rest first.

How to cut with a meat knife 20.5 cm

Let the meat rest first, otherwise the juice runs out as soon as you cut. Set the heel of the knife on the meat and pull it towards you in one long stroke, using your own weight as pressure rather than force. Always cut across the grain, especially with brisket and picanha: that's the difference between tender and tough.

Maintenance

Rinse the knife straight after use and dry it immediately. Acids and salt from rubs and marinades attack the edge if you leave it standing. Not in the dishwasher. Hone the edge regularly on a honing steel, and you'll only need to sharpen a few times a year.

What's the difference with a chef's knife?
A chef's knife has a wider, more curved blade that you use with a rocking motion for vegetables and portioning. This knife is longer and narrower and is meant to cut through large meat in one straight stroke.
Can I also cut fish and vegetables with it?
Yes. Smoked salmon, ham and large vegetables like cabbage or pumpkin cut perfectly well with it. For fine work like peeling or trimming, use a paring knife instead.
How do I keep the knife sharp?
Hone it on a honing steel after every use and only sharpen it once honing no longer helps. Cut on wood or plastic, not on glass or stone.
Can the knife go in the dishwasher?
No. The heat and salts dull the edge faster and damage the handle's finish. Rinsing and drying immediately is enough.
