When do you use a forged butcher's knife?

You reach for this knife for coarse cutting work: dividing large cuts of meat, cutting along a bone and portioning thick pieces. The blade is substantial and stiff, so you go through meat with long strokes rather than forcing it. For fine work on the board, use a chef's knife instead.

Why a forged butcher's knife and not a cleaver

A cleaver is used to chop through bone. This knife cuts instead: you set the blade against the meat and draw through. At home that's often safer and more precise, since you work around the bone rather than through it.

How to work with it

Work on a large board and hold the meat with a fork or meat claw, not with your fingers in front of the blade. Cut with long strokes from heel to tip and let the weight of the knife do the work. Cut meat you're going to grill against the grain, it's noticeably more pleasant to chew.

Maintenance

Wash by hand, dry immediately and don't put it in the dishwasher. Store the knife loose in a block or on a strip, for example a magnetic walnut knife block, so the edge doesn't knock against other cutlery. No, this knife isn't made for that. You cut along the bone with it; for chopping through you need a true cleaver or a bone splitter.
What's the difference with the meat knife from the same series?
The meat knife is narrower and longer, made for thin slices of cooked meat. This knife is more substantial and made for dividing raw meat.
How do I care for the olive wood handle?
Wash by hand, dry immediately and rub with a neutral oil a few times a year. Never let it soak and don't put it in the dishwasher.
