What do you use a cherry wood spoon for?

For stirring and scooping in cast iron pans, a Dutch Oven or a skillet. Wood doesn't damage the seasoning layer in the pan, and the handle stays cool in your hand, even over fire. You use it for both hot dishes and cold ones, such as salads and dressings.

A cherry wood spoon is the tool you want to use in cast iron. Metal scrapes away the seasoning layer built up on a well-used pan or Dutch Oven, plastic melts over the fire and doesn't hold up well to heat. Wood does neither: it's soft enough for the pan, it stays cool in your hand, and it doesn't carry yesterday's flavours into today's dish.

Why a cherry wood spoon suits cast iron

Cherry wood is a dense, hard wood with a fine grain. That means the spoon absorbs little moisture and stays sturdy, even during long stints in a hot pan. The rounded head doesn't scrape into the seasoning you've built up in your cast iron, and that layer is exactly what gives your pan its non-stick properties.

Care

Rinse with warm water, dry it straight away, and let it dry standing upright. If the wood turns dull or rough, sand it lightly and rub in a little food-safe oil for kitchenware. Frequently asked questions

Can the spoon go in the dishwasher?
No. Wood swells from prolonged water and heat, then dries unevenly or cracks. A quick rinse with warm water followed by drying it straight away is the way to go.
Will wood scratch my cast iron pan?
No, that's exactly why you use wood. Metal tools scrape away the seasoning layer that gives cast iron its non-stick properties; wood leaves that layer intact.
How do I maintain the wood?
Store it dry and occasionally rub it lightly with a food-safe oil for kitchenware. If the surface turns rough, sand it very lightly before oiling it.
Does wood absorb odours and flavours?
Barely, as long as you clean and dry the spoon immediately after use. Don't leave it sitting in a pan with garlic or fish for hours, or some of that will linger.
