      What do you use a santoku knife 18 cm for?

      It's your everyday all-rounder: cutting vegetables and fruit, chopping herbs and slicing meat. The straight edge and wide blade make it suited to quick, even cutting on the board. For working around bone or trimming sinew, a narrow boning knife works better.

      The Olive Forged santoku knife 18 cm is the knife you reach for most: cutting vegetables, chopping herbs, slicing meat for the kamado. The forged blade comes sharp out of the box and the wide blade gives you enough surface to scoop sliced food off the board.

      A santoku is the Japanese counterpart to the chef's knife: shorter, straighter and with less rocking motion. You cut more calmly with it and keep more control, even when you have little room on the worktop.

      How to keep a santoku knife 18 cm sharp

      Run the knife over a honing steel every few cutting sessions: that straightens the edge again and cuts down on sharpening. Only sharpen once honing no longer helps, for example on a fixed-angle sharpening system. Always cut on wood or plastic, never on glass or stone.

      What you use it for

      Vegetables and fruit in even slices, finely chopping herbs, breaking down cooked chicken, carving steak. For working around bone you're better off with a narrower knife.

      What's the difference with a chef's knife?
      A chef's knife has a longer, more curved blade that you rock. A santoku is shorter and straighter, so you set the knife down and cut in a straight motion. If you have a compact kitchen, a santoku often feels more comfortable to work with.
      Is this knife suitable for left-handers?
      Yes. The blade is ground on both sides, so it cuts just as well for left-handers as for right-handers.
      Can the knife go in the dishwasher?
      No. The heat and salts damage the olive wood handle and dull the edge faster. Rinse the knife, dry it immediately and store it loose so the edge doesn't knock against anything.
      How do I store the knife safely?
      On a magnetic strip or in a knife block, with the edge free. Kept loose in a drawer, the edge will dull within a few weeks.
