    What is whisky oak smoking dust used for?

    For cold smoking cheese, salmon, bacon and cured meats with a cold smoke generator. The fine dust smoulders for hours at low temperature and gives a rich smoke flavour with a warm undertone of whisky oak. It isn't meant for use on burning charcoal.

    What is whisky oak smoking dust used for

    How to cold smoke

    Fill the generator loosely, light one corner and blow out the flame after a minute. The dust should smoulder, not burn. Give the smoking space some airflow and keep the temperature below thirty degrees. Two to four hours is enough for cheese, usually a bit longer for salmon.

    Storage

    Store the dust dry and well sealed. If it picks up moisture, the smoulder keeps going out and you get sour smoke instead of clean smoke.

    Not as a drink, but as a direction. The smoke becomes warmer and slightly sweeter than with plain oak, with a vanilla-like undertone.
    How long do I smoke cheese with this dust?
    Two to four hours is enough for most cheeses. Let the cheese rest in the fridge for a few days afterwards so the smoke flavour distributes.
    Can I use this dust on the kamado?
    Yes, with a cold smoke generator in a cold kamado and the vents open just a crack for airflow. Never throw it on burning coals.
    What's the difference with chunks made of the same wood?
