What is a brute forged utility knife used for?

For almost all everyday cutting work. In length the knife sits between a chef's knife and a paring knife, so it portions meat just as well as it slices vegetables and chops herbs. That makes it the knife that leaves the block most often, both in the kitchen and outside at the barbecue.

The brute forged utility knife is the knife you reach for without thinking. It is shorter than a chef's knife and longer than a paring knife, exactly the size for dicing an onion, filleting a chicken breast or finely chopping a bunch of parsley. The raw, forged look suits the work outside at the kamado, but the knife does just as well in the kitchen.

The balance sits just behind the handle, which keeps the tip feeling light so you stay precise with small movements. The blade tapers gradually, so you can work both by pressing down and rocking on the board.

What the brute forged utility knife is for

Think about prepping for your barbecue day: slicing peppers for skewers, cutting a piece of pork belly into cubes, chopping herbs for a marinade. For boning a large shoulder you reach for a boning knife, and for carving a brisket a long meat knife. Everything in between you do with this one knife.

Care and keeping it sharp

Wash the knife by hand and dry it immediately after use. Never leave it in the sink and do not put it in the dishwasher: the blade and the handle noticeably suffer from it. Draw the knife over a honing steel a few strokes before every session, and only sharpen it once honing no longer helps.

What is the difference with a chef's knife?
A chef's knife has a longer, taller blade and is meant for larger quantities and bigger cuts. The utility knife is shorter and more nimble, so you can do finer work with it without constantly switching knives.
Can this knife go in the dishwasher?
No. Wash it by hand in warm water, rinse it and dry it immediately. The dishwasher programme damages both the edge and the handle.
How do I keep the knife sharp?
Hone it regularly on a honing steel to keep the edge straight. Once honing stops helping, it is time to sharpen on a whetstone or with a sharpening system.
Is the knife suitable for cutting meat off the bone?
For light work along a bone it can manage, but for real boning choose a narrower, more flexible boning knife. Chopping through hard bone is not something you do with this knife.
