How to use the grate
Let the kamado come up to temperature gently with the grate already in place. Cast iron needs longer than stainless steel to get properly hot through, so give it about ten extra minutes. Place your meat on it afterwards and leave it until it releases on its own, that's how you keep the grill marks crisp.
Maintenance
Brush the grate clean while it's still lukewarm, that's the easiest way. Rub the cast iron lightly with a neutral oil afterwards. Don't leave it wet, or rust gets a chance.
