Cast iron versus stainless steel: the difference on your plate
Stainless steel is light and reacts quickly to temperature changes, but transfers less heat to your food. Cast iron is heavier and heats up more slowly, but once hot it transfers far more heat to the contact surface. That gives you a deeper, darker crust than on stainless steel, with less chance of a grey band around your meat.
Maintenance
Preferably clean the grate while it's still a little warm, that's the easiest way. Rub the cast iron lightly with oil afterwards to keep rust at bay.
