This ceramic chicken sitter is the alternative to the well-known beer can under your chicken. You fill the reservoir with liquid, such as beer, wine or stock, add some herbs, and stand the chicken upright over it. As it cooks, the liquid heats up too and steam rises inside the chicken, keeping the meat moist while the skin crisps up on the outside.
Why a ceramic chicken sitter instead of a beer can
A can of beer under the chicken is a familiar trick, but a can is narrow and tips over easily, and not every can is meant to be heated on the BBQ. This sitter is made of ceramic: sturdy, wide enough to keep the chicken balanced, and built to withstand heat. On top of that, you choose what goes inside yourself.

How to use the sitter
Fill the reservoir with your chosen liquid and some herbs, place the chicken on top, and set the whole thing over indirect heat. Keep the sitter away from the coals, with a heat deflector in between if needed, so the chicken cooks gently without burning underneath.
Care
Let the sitter cool down first after grilling, then rinse the reservoir clean. Never put a hot ceramic sitter straight into cold water: that temperature difference can damage the ceramic.
