This cast iron grill plate 23 inch gives you two cooking surfaces on a single plate. The ridged side sets crisp lines on your steak, the flat side works as a plancha for onions, prawns or a fried egg. It's a half moon, so on the other half of your XL Grill Bill you simply place a stainless steel grate or a cast iron grill. That way you cook on two zones at once.
What the cast iron grill plate 23 inch is for
You place the plate on the fire ring of your 23 inch Grill Bill, without a heat deflector, or on top of your stainless steel grate. Use the ridged side for meat, fish and vegetables you want grill marks on. The flat side is there for anything that would otherwise fall through the bars: prawns, small vegetables, chopped onion or an egg.

Cast iron versus stainless steel
Stainless steel heats up quickly but holds little heat. Cast iron heats up more slowly, but once hot stays hot far longer and spreads that heat more evenly across the surface. With this plate, the cast iron is also extra thick. You notice it while searing: less chance of a grey ring around your meat and a tighter, darker crust.
Maintenance
Clean the plate while it's still a little warm and rub the cast iron lightly with oil afterwards. Don't leave it wet, that keeps rust away.
