With indirect cooking the direct heat is blocked by a heat deflector. That makes burning unlikely and gives the food time to cook evenly.

Forgiving does not mean foolproof. There are situations where a kamado leaves you very little margin.
In these situations the ceramic makes the problem worse. Once heat has built up, you will not lose it quickly.
The most common mistake is adjusting the airflow too aggressively. Because a kamado responds slowly, it sometimes looks as if nothing is happening. Step in again at that point and you cause overshoot.
That can make a kamado suddenly get far hotter than intended. It feels unpredictable, but it is really the result of acting too quickly.

Experienced kamado users adjust less, open the lid less and trust the system more. That is what makes their results more consistent.
A kamado forgives small mistakes, but it does expect understanding. Work without a plan, rush things or ignore the technique and you will still run into trouble.
